Cannoli (Traditional Sweet from Sicily)

⭐ Ingredients

For the Shell (Dough):

250 g flour
1 egg
2 tbsp sugar
2 tbsp butter
1 tbsp cocoa powder (optional, for color)
60 ml dry white wine
1 tsp ground cinnamon
1 tsp vanilla extract
A pinch of salt
Vegetable oil for frying

For the Filling:

500 g ricotta
100 g powdered sugar
100 g finely chopped dark chocolate or chocolate chips
1 tsp vanilla extract
Zest of one orange (optional)
A pinch of cinnamon (optional)

For Decoration:

Powdered sugar
Chopped pistachios
Candied fruits

⭐ Preparation

1. Mix the dry ingredients:
Combine flour, sugar, cocoa powder (if used), cinnamon, and salt in a large bowl. Add the egg, butter, and vanilla extract.

2. Add the wine and knead:
Gradually pour in the wine and knead until smooth. Knead on a floured surface for about 10 minutes. Wrap and rest for 30 minutes.

3. Roll and shape the shells:
Divide the dough, roll very thin, and cut out 10 cm circles. Wrap each circle around a cannoli metal tube and seal the edges with water.

4. Fry the shells:
Heat vegetable oil to 180°C. Fry each shell for 2–3 minutes until golden. Remove from the tube and drain on paper towels.

5. Prepare the filling:
Mix ricotta, powdered sugar, vanilla, chocolate chips, and orange zest. Add cinnamon if desired. Refrigerate for 30 minutes.

6. Fill the cannoli:
Fill a piping bag with the ricotta mixture and carefully fill the cooled shells.

7. Decorate and serve:
Dip the ends in pistachios or candied fruits. Dust with powdered sugar before serving.

Serve immediately after filling to keep the shells crispy.
