For the pork:
- 4 boneless pork chops (about ½ inch thick)
- Salt and black pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs
- 1 tablespoon water
- 1 ½ cups breadcrumbs (Italian-style or panko for extra crunch)
- ½ cup grated Parmesan cheese
- Vegetable oil (for frying)
For serving (optional but delicious):
- Lemon wedges
- Fresh arugula or salad greens
- Cherry tomatoes, halved
- Shaved Parmesan
🍳 Instructions
-
Prepare the pork:
- Place pork chops between two sheets of plastic wrap or parchment paper.
- Pound lightly with a meat mallet or rolling pin until about ¼ inch thick.
- Season both sides with salt and pepper.
-
Set up your breading station:
- Place flour in one shallow bowl.
- In a second bowl, whisk eggs with 1 tablespoon of water.
- In a third bowl, combine breadcrumbs and Parmesan.
-
Coat the pork:
- Dredge each pork chop in flour (shake off excess).
- Dip into the egg mixture.
- Press into the breadcrumb mixture until fully coated.
-
Fry:
- Heat about ¼ inch of oil in a large skillet over medium-high heat.
- Once hot, fry pork chops for about 3–4 minutes per side until golden brown and cooked through.
- Transfer to a paper towel–lined plate to drain excess oil.
-
Serve:
- Plate the pork with a handful of arugula, cherry tomatoes, and shaved Parmesan.
- Squeeze a little lemon juice on top for brightness.
💡 Tips
- Use panko breadcrumbs for extra crispiness.
- Don’t overcrowd the pan — cook in batches if needed.
- You can bake instead of frying: 425°F (220°C) for 15–20 minutes, flipping halfway.
