This Crispy Pork Milanese is golden, crunchy, and juicy — a quick Italian-inspired dinner that tastes restaurant-quality at home!

🧂 Ingredients

For the pork:

  • 4 boneless pork chops (about ½ inch thick)
  • Salt and black pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon water
  • 1 ½ cups breadcrumbs (Italian-style or panko for extra crunch)
  • ½ cup grated Parmesan cheese
  • Vegetable oil (for frying)

For serving (optional but delicious):

  • Lemon wedges
  • Fresh arugula or salad greens
  • Cherry tomatoes, halved
  • Shaved Parmesan

🍳 Instructions

  1. Prepare the pork:

    • Place pork chops between two sheets of plastic wrap or parchment paper.
    • Pound lightly with a meat mallet or rolling pin until about ¼ inch thick.
    • Season both sides with salt and pepper.
  2. Set up your breading station:

    • Place flour in one shallow bowl.
    • In a second bowl, whisk eggs with 1 tablespoon of water.
    • In a third bowl, combine breadcrumbs and Parmesan.
  3. Coat the pork:

    • Dredge each pork chop in flour (shake off excess).
    • Dip into the egg mixture.
    • Press into the breadcrumb mixture until fully coated.
  4. Fry:

    • Heat about ¼ inch of oil in a large skillet over medium-high heat.
    • Once hot, fry pork chops for about 3–4 minutes per side until golden brown and cooked through.
    • Transfer to a paper towel–lined plate to drain excess oil.
  5. Serve:

    • Plate the pork with a handful of arugula, cherry tomatoes, and shaved Parmesan.
    • Squeeze a little lemon juice on top for brightness.

💡 Tips

  • Use panko breadcrumbs for extra crispiness.
  • Don’t overcrowd the pan — cook in batches if needed.
  • You can bake instead of frying: 425°F (220°C) for 15–20 minutes, flipping halfway.
