A creamy Italian dessert with coffee-soaked ladyfingers and mascarpone.
Ingredients:
- 1 cup strong brewed coffee (cooled)
- 2 tbsp sugar
- 3 egg yolks
- ½ cup granulated sugar
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1 tsp vanilla extract
- 20 ladyfinger biscuits
- Cocoa powder (for dusting)
Instructions:
- Whisk egg yolks and sugar over a double boiler until thick and pale. Let cool.
- Mix in mascarpone cheese until smooth.
- Whip heavy cream with vanilla until stiff peaks form, then fold into the mascarpone mixture.
- Dip ladyfingers in coffee and layer them in a dish.
- Spread mascarpone mixture on top. Repeat layers.
- Refrigerate for at least 4 hours or overnight. Dust with cocoa powder before serving.
