Ingredients:
- 1 baguette or Italian bread, sliced
- 2 cups cherry tomatoes, diced
- 2 cloves garlic, minced
- ¼ cup fresh basil, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar (optional)
- Salt and pepper to taste
- 1 garlic clove (for rubbing on bread)
Instructions:

Prepare the Topping:
- In a bowl, combine diced tomatoes, minced garlic, basil, olive oil, balsamic vinegar (if using), salt, and pepper.
- Mix well and let it sit for 10-15 minutes to allow the flavors to blend.

Toast the Bread:
- Preheat your oven to 375°F (190°C) or use a stovetop grill.
- Place bread slices on a baking sheet and toast for 5-7 minutes until golden and crispy.
- While warm, rub each slice with a whole garlic clove for extra flavor.

- Spoon the tomato mixture onto the toasted bread.
- Drizzle with a little more olive oil if desired.
