Classic Italian Bruschetta


Toast sliced baguette, rub with garlic, and top with a mix of diced tomatoes, basil, garlic, olive oil, salt, and pepper. Serve fresh! 🍅🥖

Ingredients:

  • 1 baguette or Italian bread, sliced
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • ¼ cup fresh basil, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 1 garlic clove (for rubbing on bread)

Instructions:

  1. Prepare the Topping:

    • In a bowl, combine diced tomatoes, minced garlic, basil, olive oil, balsamic vinegar (if using), salt, and pepper.
    • Mix well and let it sit for 10-15 minutes to allow the flavors to blend.
  2. Toast the Bread:

    • Preheat your oven to 375°F (190°C) or use a stovetop grill.
    • Place bread slices on a baking sheet and toast for 5-7 minutes until golden and crispy.
    • While warm, rub each slice with a whole garlic clove for extra flavor.
  3. Assemble & Serve:

    • Spoon the tomato mixture onto the toasted bread.
    • Drizzle with a little more olive oil if desired.
    • Serve immediately and enjoy!
