CREAMY COCONUT CHICKEN CURRY


Enjoy a flavorful, creamy chicken curry made with aromatic spices and coconut milk. Quick to prepare and perfect with rice or naan!

Ingredients:

  • 1 lb (450g) chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth (or water)
  • 2 tomatoes, chopped (or 1 can diced tomatoes)
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • Rice or naan, for serving

Instructions:

  1. Cook the Chicken: Heat 1 tablespoon of oil in a large pan over medium heat. Add the chicken pieces and cook until browned. Remove and set aside.

  2. Prepare the Base: In the same pan, add the remaining tablespoon of oil. Add the chopped onion and cook until softened, about 5 minutes.

  3. Add Garlic and Ginger: Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

  4. Spices: Add the turmeric, cumin, coriander, garam masala, and chili powder. Stir well to coat the onions, garlic, and ginger with the spices.

  5. Tomatoes: Add the chopped tomatoes (or canned tomatoes). Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and break down.

  6. Simmer the Curry: Add the coconut milk, chicken broth, and salt. Bring to a simmer, and let it cook for about 15-20 minutes until the curry thickens and the flavors blend.

  7. Return the Chicken: Add the browned chicken back into the pan. Stir and cook for another 5-10 minutes, until the chicken is fully cooked through and tender.

  8. Garnish and Serve: Garnish with fresh cilantro. Serve with rice or naan.
