Ingredients
1 ripe banana
1 cup rolled oats
1/2 cup milk (dairy or non-dairy)
1 egg
1/2 teaspoon baking powder
1/2 teaspoon cinnamon (optional)
1/2 teaspoon vanilla extract
A pinch of salt
1 teaspoon honey or maple syrup (optional)
Butter or oil for cooking
Instructions
Blend the banana, oats, milk, egg, baking powder, cinnamon, vanilla, and salt in a blender until smooth.
Heat a non-stick pan over medium heat and lightly grease it with butter or oil.
Pour small amounts of batter onto the pan, forming pancakes.
Cook for about 2 minutes or until bubbles appear on the surface, then flip and cook for another 1-2 minutes.
