- 1 head of broccoli
- 40 g breadcrumbs
- 20 g Parmesan
- 70 g Mozzarella
- 1 tbsp salt
- 15 ml vegetable oil
Recipe:
1. Separate the broccoli into florets.
2. Add salt to boiling water, then put in the broccoli and cook over medium heat for 5-8 minutes until tender.
3. Drain the broccoli in a colander or sieve to remove excess liquid. Transfer the broccoli to a bowl and mash with a fork into a puree.
4. Add breadcrumbs and Parmesan and mix.
5. Shape the mixture into small patties, place a cube of mozzarella in the center of each, and form cutlets.
6. Fry the cutlets in vegetable oil for 1-2 minutes on each side.
7. Serve the cutlets warm as an appetizer or with a side dish.
