Easy Taco Salad

Ingredients

For the Salad:

  • 1 lb (450g) ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar or Mexican cheese blend
  • 2 cups tortilla chips, lightly crushed
  • ½ red onion, finely diced
  • 1 avocado, diced
  • Fresh cilantro, for garnish

For the Creamy Cilantro Lime Dressing:

  • ½ cup sour cream (or Greek yogurt)
  • ¼ cup mayonnaise
  • 2 tbsp fresh lime juice
  • 2 tbsp fresh cilantro, chopped
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Cook the Beef:
    • In a skillet over medium heat, cook the ground beef until browned.
    • Drain excess fat, then stir in taco seasoning with a splash of water. Simmer for 2–3 minutes.
  2. Make the Dressing:
    • In a bowl, whisk together sour cream, mayonnaise, lime juice, cilantro, garlic, salt, and pepper.
    • Adjust to taste and set aside.
  3. Assemble the Salad:
    • In a large bowl, layer chopped lettuce, tomatoes, beans, corn, onion, and avocado.
    • Add the seasoned ground beef on top.
    • Sprinkle with cheese and crushed tortilla chips.
  4. Serve:
    • Drizzle with cilantro lime dressing.
    • Garnish with extra cilantro and lime wedges if desired.
