Ingredients
For the Salad:
- 1 lb (450g) ground beef (or ground turkey/chicken)
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup shredded cheddar or Mexican cheese blend
- 2 cups tortilla chips, lightly crushed
- ½ red onion, finely diced
- 1 avocado, diced
- Fresh cilantro, for garnish
For the Creamy Cilantro Lime Dressing:
- ½ cup sour cream (or Greek yogurt)
- ¼ cup mayonnaise
- 2 tbsp fresh lime juice
- 2 tbsp fresh cilantro, chopped
- 1 clove garlic, minced
- Salt and pepper, to taste

Cook the Beef:
- In a skillet over medium heat, cook the ground beef until browned.
- Drain excess fat, then stir in taco seasoning with a splash of water. Simmer for 2–3 minutes.

Make the Dressing:
- In a bowl, whisk together sour cream, mayonnaise, lime juice, cilantro, garlic, salt, and pepper.
- Adjust to taste and set aside.

Assemble the Salad:
- In a large bowl, layer chopped lettuce, tomatoes, beans, corn, onion, and avocado.
- Add the seasoned ground beef on top.
- Sprinkle with cheese and crushed tortilla chips.

- Drizzle with cilantro lime dressing.
- Garnish with extra cilantro and lime wedges if desired.
