- 1 cup fresh cilantro leaves (packed, tender stems ok)
- ½ cup sour cream (or Greek yogurt for lighter version)
- ¼ cup mayonnaise
- 2 tablespoons fresh lime juice (about 1 lime)
- 1 teaspoon lime zest
- 1 clove garlic, minced
- 1 tablespoon olive oil
- ½ teaspoon honey or sugar (optional, for balance)
- ¼ teaspoon salt (or to taste)
- 2–3 tablespoons water (to thin, if needed)

- Add cilantro, sour cream, mayonnaise, lime juice, zest, garlic, olive oil, honey, and salt into a blender or food processor.
- Blend until smooth and creamy.
- If too thick, add water a tablespoon at a time until it reaches your desired consistency.
