Meatballs in Tomato Sauce with Vegetables 🥘
Ingredients
For the Meatballs
- 500 g chicken mince
- 1 egg 🥚
- 30–40 g breadcrumbs
- 1 small/medium onion, blended 🧅
- Salt 🧂
- Pepper
- Smoked paprika
For the Sauce
- 1 onion, cut into quarter rings
- 1 carrot, sliced 🥕
- 1 bell pepper, sliced 🫑
- 200 g cherry tomatoes 🍅
- 70 g tomato paste
- 2 garlic cloves, minced 🧄
- Fresh herbs 🌿
- Salt, sugar, pepper
- Italian herbs
Instructions
1. Prepare Meatballs
- Mix chicken mince with blended onion, egg, breadcrumbs, salt, pepper, and smoked paprika.
- Shape into small meatballs.
- Fry in a preheated pan with oil until golden on all sides. Remove and set aside.
2. Cook the Vegetables
- In the same pan, sauté the onion for a few minutes.
- Add carrot and bell pepper; cook for 5–7 minutes.
- Add cherry tomatoes, salt, and pepper; cook for 3–4 minutes.
3. Make the Sauce
- Add tomato paste, sugar, minced garlic, Italian herbs, and 100 ml water.
- Stir well to combine.
4. Combine & Simmer
- Add the meatballs back into the sauce.
- Gently mix, cover with a lid, and simmer on low heat for 7–10 minutes.
