Meatballs in Tomato Sauce with Vegetables 🥘

Ingredients

For the Meatballs

  • 500 g chicken mince
  • 1 egg 🥚
  • 30–40 g breadcrumbs
  • 1 small/medium onion, blended 🧅
  • Salt 🧂
  • Pepper
  • Smoked paprika

For the Sauce

  • 1 onion, cut into quarter rings
  • 1 carrot, sliced 🥕
  • 1 bell pepper, sliced 🫑
  • 200 g cherry tomatoes 🍅
  • 70 g tomato paste
  • 2 garlic cloves, minced 🧄
  • Fresh herbs 🌿
  • Salt, sugar, pepper
  • Italian herbs

Instructions

1. Prepare Meatballs

  1. Mix chicken mince with blended onion, egg, breadcrumbs, salt, pepper, and smoked paprika.
  2. Shape into small meatballs.
  3. Fry in a preheated pan with oil until golden on all sides. Remove and set aside.

2. Cook the Vegetables

  1. In the same pan, sauté the onion for a few minutes.
  2. Add carrot and bell pepper; cook for 5–7 minutes.
  3. Add cherry tomatoes, salt, and pepper; cook for 3–4 minutes.

3. Make the Sauce

  1. Add tomato paste, sugar, minced garlic, Italian herbs, and 100 ml water.
  2. Stir well to combine.

4. Combine & Simmer

  1. Add the meatballs back into the sauce.
  2. Gently mix, cover with a lid, and simmer on low heat for 7–10 minutes.
